The menu at Sean’s consists of dishes aimed at taking diners back to the American farm with meat raised in a humane and wholesome way, locally sourced organic produce, fish from conscientious fishmongers, artisan cheeses and cured meats from small local purveyors and custom-made bread from expert bakers. The California-centric wine list twists and turns, by glass or bottle, through the Golden State’s fruitful vineyards, with an occasional stop for an Oregon Pinot Noir or a Napa Valley Cab. What Sean thinks about sustainable foods In case you haven’t heard: After years of importing ingredients from all over the world, chefs are going back to basics and staying local. The goal is to limit the human impact on the environment—less flying, driving, and fuel consumption (all of which leaves a smaller “eco‐footprint”). Farm‐fresh fare is also packed with nutrients, doesn’t have to be sprayed with chemicals to protect it for the long haul to the restaurant, and just plain tastes good. Everybody wins, from farmer to chef to diner. Farm to Table accelerates the demand for and adoption of sustainable practices throughout the food chain, from farmer to consumer. Industrial agriculture has made food inexpensive, but large‐scale farming practices have hidden costs and push our natural systems to the limit. Agricultural chemicals pollute our water and find their way into our food as carcinogens. Our soil loses fertility and our water supplies dwindle. Our Farm to Table initiative works directly with farmers, industry and government to promote innovative, environmentally sound practices and sustainable, local agriculture. We value the diversity supplied by a global food system, and understand the environmental impact of deciding what to eat, when to eat it, and how it is grown. Together we can make food healthier. Thinking globally and sourcing locally is not just politically correct; it’s also personally rewarding for the farmer. Sean McLendon Chef and, the owner of S.A.B.
